Potato Carrot Kugel Vegetables & Fruits

2 tbsp. vegetable oil
1 onion, thinly sliced
3 cups sliced mushrooms
1 1/2 tsp. dried thyme
4 baking potatoes(about 2 lbs)
2 large carrots
3 eggs
3/4 tsp. salt
1/2 tsp. pepper
1 cup shredded Cheddar cheese

In a large skillet, heat oil over medium heat; cook onion, mushrooms and thyme, stirring occasionally, for about 10 minutes or until softened. Place in large bowl. Peel and grate potatoes and carrots; add to onion mixture and toss to mix. Whisk together eggs, salt and pepper; add to potato mixture. Add cheese and toss well.

Spoon into greased 11"x7"(2L) baking dish;bake in top of 400¼F oven for 1 hour or until golden and crispy. Makes 4 main -course servings.
