4 tbsp. soft butter or bacon fat
4 med. potatoes( 1 1/4 lbs.) 1 med. onion,grated 1/3 cup fine dry bread crumbs |
1 egg, slightly beaten
1/2 tsp. salt 1/8 tsp. pepper |
Heat oven to 400F. Grease a 12"x7"x2" glass baking dish with 2 tbsp. of the butter or bacon fat. Peel potatoes and grate them on a med. grater or with a food processor. Add the next 5 ingredients, and toss well with a fork.
Spread mixture evenly in baking dish and dot with remaining butter or bacon fat. Bake until potatoes are tender and top and bottom are golden, about 50 minutes. Cut into squares to serve. Serves 6.
