Potato and Turnip Gratin Vegetables & Fruits

2 leeks(white part only), finely chopped
2 large onions,finely chopped
2 small white turnips, peeled and finely sliced
2 lbs potatoes,peeled and finely sliced(about 8 medium)
1/2 tsp. salt
pinch pepper
1 cup chicken stock
2 tsp. chopped fresh parsley

In a large bowl, toss together leek, onion,turnip, potatoes, salt & pepper. Transfer to a 3 litre shallow casserole dish, pressing mixture down firmly.

Pour chicken stock over vegetables; cover and bake in a 300¼F oven for 1 hour. Uncover and bake for 30 to 45 minutes longer or until vegetables are tender. Sprinkle with parsley.

Makes 8 servings.
