Potatoes, Cheddar | Vegetables & Fruits |
8-10 med potatoes, cooked in jackets, peeled and cubed
2/3 cup chopped green onions 1 cup sour cream 1 1/2 cups grated Cheddar cheese 1 cup chicken stock |
1 cup light cream
1/2 tsp. salt 1/4 tsp fresh ground pepper 1/2 cup sweet butter 2 cup crushed cornflakes |
1. Preheat oven to 350¼ F.
2. Arrange potato cubes in a 9" x 13" baking dish or casserole.
Sprinkle chopped onions over potatoes evenly.
3. In a mixing bowl, combine sour cream, cheese, stock, light cream, salt & pepper. Pour over potatoes.
4. In a small saucepan, melt butter. Stir in cornflakes until covered with butter. Spread enough to make a THIN LAYER on
top of potato mixture.
5. Bake in oven for 30 minutes, until heated through and lightly browned.
Makes 8 TO 10 servings.
