6 baking potatoes
2 tbsp. butter or marg. 1/2 cup milk 1/4 tsp. black pepper 1 egg yolk |
2 egg whites
1/2 cup finely grated Swiss cheese 1 egg yolk 1 tbsp. water |
Bake potatoes at 400F until tender(50 to 60 minutes). Remove from oven, keeping oven at 400F.
Cut 1/5 from the top of each potato and discard. Scoop potato pulp into bowl with a teaspoon. DO NOT BREAK SKINS.
Mash pulp very well in mixer. Add butter,milk,pepper and egg yolk and beat until fluffy.Beat egg whites until stiff. Fold into potato mixture along with grated cheese. Pile mixture into potato skins. Beat remaining egg yolk and water with a fork and brush some of the mixture over each potato.
Set potatoes on a pan or cookie sheet and bake until hot and nicely browned.( about 15 minutes). Serves 6.
NOTE: Prepare and refrigerate, then do final baking just before serving time.
