Potatoes, Herbed Baked Vegetables & Fruits

4 potatoes(new preferred)
2 tbsp. butter
2 tbsp. vegetable oil
1 tsp. chopped garlic
1 tsp. chopped parsley
1/4 tsp. oregano
1/4 tsp. thyme
paprika
Parmesan Cheese

Preheat oven to 400¼F/200¼C.

Wash potatoes. Remove any spots or blemishes. Lay potato alongside a wooden spoon handle. Cut 1/4" slices across potato allowing spoon handle to stop knife from cutting all the way through.Melt butter in a dish and add oil. Place potatoes in a shallow baking dish and drizzle with the oil-butter m ixture. Sprinkle with herbs and bake until almost done(35 to 45 min.) Sprinkle with paprika and Parmesan cheese; finish baking 10 minutes more or until browned and cooked through.

NOTE: If a whole potato is too much, or if your potatoes are quite large, cut the potatoes in half, lengthwise, slice them as you would a whole potato and proceed with the recipe.
