Potatoes,Mashed with Onions Vegetables & Fruits

3 cups mashed potatoes
1 tbsp. soft sweet butter
3 tbsp. light cream
3 eggs, separated
1 med. onion,finely chopped
2 tsp. chopped chives
1 tsp. chopped fresh parsley
1 tsp. salt
1/2 tsp. fresh ground black pepper

Preheat oven to 350F.

In a large bowl beat butter and cream into potatoes by hand.Add yolks one at a time,beating after each addition. Stir in onion, chives, parsley, salt and pepper.

Beat egg whites until stiff but not dry. Fold into potato mixture.

Spoon into a buttered 6 cup souffle dish. Bake in oven for 30 minutes, or until puffy and brown on top.
