Potatoes, Mustardy Baked Vegetables & Fruits

(1.5kg.)about 6 large potatoes
1/3 cup olive oil
1 med.(150g)onion,finely chopped
2 cloves garlic,crushed
2 tsp.black mustard seeds
2 tsp. dry mustard
1 tbsp. dried Italian herbs
1/2 cup sliced black olives

Cut potatoes into 2cm. pieces(3/4 inch+). Heat oil in large baking dish,add potatoes, onion,garlic, mustard seeds, dry mustard and herbs; stir over heat until combined. Bake, uncovered, in moderately hot oven for 30 minutes, stir in olives, bake a further 30 minutes, uncovered, or until potatoes are browned and crisp.

Serves 6.
