Potatoes,Smashed,Olive Oil | Vegetables & Fruits |
2 lbs. Yukon Gold or baking potatoes( about 10)
6 garlic cloves 1 tsp. salt --------------- 1/2 to 1 cup potato cooking water |
1/4 cup olive oil
1/2 cup chopped green onions (6) 1/2 cup chopped fresh parsley 1/2 tsp. salt 1/2 tsp fresh ground pepper |
Peel medium sized potatoes and quarter. Put in a large pot of cold water. Peel 6 med.sized garlic cloves;crush and chop and add to the pot of potatoes. Add salt and bring to a boil. Cook for 15 to 20 minutes or until potatoes are tender.
Drain cooked potatoes well and reserve 1 to 2 cups of the cooking water.
Mash the potatoes and garlic,adding water to your desired consistancy. Whip mixture with electric mixer or equivalent. Add olive oil, onions,parsley(reserve some parsley to decorate the
top), salt and pepper and whip to distribute the herbs evenly.
Put in a casserole or serving dish.Decorate with reserved parsley. Serves 8.
This can be served at once or made ahead and spooned or piped into a gratin dish to reheat in the oven or microwave just before serving.Leftover mixture can de formed into patties and cooked in butter or olive oil to reheat.
