Roasted Potato Balls | Vegetables & Fruits |
3 lbs small boiling potatoes, quartered or formed into 1" balls
3 tbsp. olive oil 1/2 tsp. salt |
1/2 tsp. fresh ground pepper
3 lg. garlic cloves,sliced thin 1/4 cup fresh minced parsley |
In a large roasting pan toss together well the potatoes, oil, salt, pepper and garlic and roast the potatoes in a preheated 350F oven, tossing them occasionally, for 1 hour, or until they are tender and golden. Add the parsley and toss mixture well. Serves 8 to 10.
