2 tbsp. raisins 4 large eggs,beaten slightly 3 tbsp. cream cheese,softened 1/8 tsp. each salt,nutmeg,cinnamon 1-10oz. pkg. frozen chopped spinach,thawed & squeezed dry 3/4 cup half&half 3/4 cup grated cheese 1 tsp. white wine vinegar |

3 lbs spinach 6 slices bacon 1/2 cup chopped onion 1/2 tsp. cinnamon 2 tbsp. red wine vinegar 1/2 tsp. salt fresh ground black pepper |
#1. SPINACH BAKED WITH RAISINS
In a small bowl let the raisins soak in hot water to cover for 30 min., or until plumped, and drain them. In a bowl combine well the eggs, cream cheese,salt,nutmeg and cinnamon and stir in the spinach, raisins, half & half, cheddar cheese and vinegar.
Transfer mixture to a buttered 9"diam. glass pie plate and bake it in a preheated 400F oven for 20 to 25 minutes or until it is set and puffed slightly.
Serves 6 to 8.
#2 BAKED SPINACH WITH BACON
Wash spinach. Cut leaves crosswise into 1/2" strips. Cut bacon into 1" pieces. Saute bacon with onion until onion is lightly browned. Remove from heat; add cinnamon, vinegar, salt and pepper. Combine with spinach; place in a buttered baking dish, cover and bake in a moderate oven 350F for 30 minutes or until spinach is tender.
Serves 6.
