6 med. or 4 large sweet potatoes
1/4 cup melted butter 1 cup maple syrup |
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg |
Cook sweet potatoes in boiling salted water for 30 to 35 minutes or until tender. OR cook in your microwave as directed.
Heat oven to 350F. Peel potatoes and cut into 1/2" slices. Combine butter, syrup and spices. Place potatoes in a buttered shallow casserole in layers, pouring mixture over each layer. Bake 35 to 40 minutes or until glazed, basting several times with syrup.
Makes 6 servings.
