Zucchini, Stir-fried with Ginger Vegetables & Fruits

1 tsp. veg. oil
2 cups sliced zucchini
1/2 red onion,sliced
2 tsp. chopped gingerroot
2 tsp. soy sauce
1 tsp. sesame oil
salt & pepper to taste

In a nonstick skillet, heat oil over med-high heat. Add zucchini, onion, and ginger; stir fry for 1 minute. Add 1 tbsp. water; cover and steam for 1 to 2 minutes or until tender-crisp. Stir in soy sauce, oil and salt and pepper to taste. Makes 4 servings.
